Butternut, Beetroot and Feta Salad

Butternut Beetroot and Feta SaladIngredients

  • 1 packet baby spinach
  • 500g chopped butternut
  • 500g baby beetroot
  • 2 wheels Feta
  • Olive oil
  • Brown sugar
  • Salt & Pepper
  • Thyme
  • Balsamic drizzle

Method

Put the beetroot and the butternut on a baking tray and drizzle with olive oil. Sprinkle with salt and black pepper and add a little thyme to the butternut. Mix some brown sugar with balsamic drizzle and pour over beetroot. Pop the beetroot and butternut into a 180˚C (350˚F) oven for 45 minutes. When the veggies feel soft, take it out of the oven and let it cool.
Place the cool veggies on a bed of baby spinach, crumb the feta, drizzle with balsamic vinegar and voila!

You can even substitute the feta with blue cheese or add a few pumpkin seeds.
